Misfits Salsa
From Jim Sarette, his recipe for the Salsa that we ate at NEAT Fair this year.
- Stewed Tomatoes two 16 oz. cans (yes two whole cans)
- 1/2-3/4 Large Vidalia (sweet) onion
- 1/2 Sweet Red (bell) Pepper
- 1/2 Sweet Yellow (bell) Pepper
- 2 Tblsp minced chopped Garlic
- 2 Tblsp Lime Juice
- 3/4 Cup Cilantro (mexican parsley) - to start
- 2 Tblsp Cayenne pepper - Justin Wilson would be proud!
This mixture will satisfy the general population as many can attest to.
A spare container of Ground Cayenne is used to freshen-up the "heat".
Cilantro is a funny thing, folks either really like it or Not.
A batch of each will not be wasted.
NOW
For folks who require more zip/zest out of life: {Hotter}
Add "hot" peppers: Either or in conbination.
- 1/4 cup of Jalepenos - Use the larger (not so hot ones, only if you really like them)
- 3 Tblspn habaneros - just a starter!
- 4-6 1in. chopped Cerranos - Hard bite, the longer these sit the stronger the sauce gets.
Don't get carried away, remember that as you sample and make it hotter and hotter someone may
combust at first taste.
